Healing Powers of Dandelion Root

The dandelion plant is one of our favorite medicinal herbs to cultivate, harvest and use in creating healing recipes. Although many people consider dandelion an annoying weed, it is one of our most powerful plant allies with a long history of medicinal and culinary use.

HEALTH BENEFITS OF DANDELION ROOT

Every part of this amazing wild weed is useful, edible, and medicinal including the roots, stems, flowers, leaves, and seeds! Dandelion is a source of complete protein containing all eight essential amino acids and all nutrients required for human survival including several B vitamins, calcium, iron, iodine, boron, zinc, trace minerals, and so much more.

Dandelion root has been used for thousands of years to cleanse the body and help drain and detoxify the liver. This golden plant increases flow of bile from the gallbladder into the duodenum and improves digestion. Its cleansing properties improve the quality of blood and lymphatic fluids, which enhances overall immunity and vitality. It also reduces swelling and inflammation of the body’s tissues and strengthens and tones the stomach. 

In 1957, the United States imported more than 100,000 pounds of dandelion root for use in pharmaceuticals. In many European countries and in the Ayurvedic medical system, it is a standard treatment for digestive and liver issues, urinary problems, swollen lymph nodes, and arthritis.

HARVESTING & UTILIZING DANDELION ROOT

Dandelion root can be brewed into a tea that promotes blood circulation for better functioning of the spleen, liver, kidneys, and stomach. Roasted dandelion root is a popular, healthy coffee substitute with a chocolatey scent and flavor. Fresh or dehydrated dandelion roots have many uses in baking and can easily be added to soups, salads, or pestos.

In late fall, dandelions begin directing their energy into the roots for nutrient storage over winter. Studies show that dandelion roots harvested in autumn contain 22-38% more biologically active compounds compared to those harvested in Spring, so we harvest dandelion roots before the first frost to receive the most potent herbal qualities.

There are many ways to welcome dandelion into the body as a healer and rejuvenator. We incorporated dandelion root in this chewy, peanut butter cookie recipe to welcome spring and celebrate the upcoming abundance of dandelion. 

The mild chocolatey flavor of roasted organic dandelion root perfectly balances the nutty flavor of the cookie, and the petals of organic marigold provide a spicy floral zest. They are also gluten free friendly.
