Oven Roasted Garden Herb Potatoes - Salt Free Recipe
These roasted red potatoes are coated in our Garden Herb Salt Free Seasoning then baked to golden brown perfection.
They are crispy on the outside but soft on the inside, and best of all they are quick and easy to make, requiring only 10 minutes of prep before baking. We enjoy them served as a side with a savory breakfast omelet, as a topping on a mixed green salad, or as an alternative to french fries with a burger or sandwich.
HEALTH BENEFITS OF POTATOES
Not only are potatoes full of vitamins, minerals, and health boosting properties, but they also are fat and cholesterol free and are low in calories. One baked russet potato contains almost half of the recommended daily value of vitamin C which helps boost immunity. Potatoes have more potassium (an essential electrolyte) than bananas, and 98% of Americans are potassium deficient. Potatoes are also packed with fiber, which helps regulate digestion and blood sugar levels, and 97% of Americans are fiber deficient.
When cooking with potatoes, we always leave the skin on. The skin contains essential vitamins and nutrients, calcium, and fiber that we don’t want to waste. Not only is leaving the skin on more nutritious, it’s also so much less work than peeling! For this recipe, simply cut off any brown spots on the skin then dice the potatoes to desired size.
Darker pigmented potatoes contain up to twice as many antioxidants as lighter potatoes, so we prefer to use red potatoes when making these Oven Roasted Potatoes, but Yukon Gold potatoes are also an excellent choice. Any potato, including sweet potatoes, will work for this recipe though, so use what you have stocked in your kitchen first!
SEASONING THE POTATOES
OVEN ROASTED GARDEN HERB POTATOES RECIPE
For this recipe, you will need the following ingredients:
1.5 lbs potatoes of choice
2 tablespoon olive or avocado oil
2 tsp Garden Herb Salt Free Seasoning from Golden Forrest
Dash of real salt to taste (optional)
Instructions:
Preheat the oven to 425 F.
Wash potatoes and pat dry.
Cut any spots off of the potato skin then dice potatoes into bite size cubes. Alternatively, you can peel the potato if you wish, but we prefer to leave it on because the skin contains lots of fiber, vitamins, calcium, and other nutrients we don’t want to go to waste!
Place potatoes in a single layer on a parchment paper lined baking sheet.
Drizzle the potatoes with olive oil then sprinkle with Garden Herb Salt Free Seasoning.
Optionally, you can add a dash of salt to taste but if you prefer to keep this dish salt free, skip this step!
Gently stir the potatoes to evenly coat them with the seasoning and oil then rearrange them into a single layer.
Bake for 30-50 minutes or until they are golden brown with a soft interior. Stir potatoes halfway through baking.
Enjoy immediately while warm. The potatoes will soften a bit as they cool. Leftovers will stay good in an airtight container in the fridge for up to 3 days. To reheat them, we recommend using the stovetop or oven so they retain a crispy texture. You can also reheat them in the microwave but the potatoes will lose their crispness this way.
